Blueberry Soup



I am a huge fruit soup fan.  Blueberry just might be my favorite.  It particularly pleases my very particular pallet.

Recipe:

2 c blueberries
1 c water
1 tsp cinnamon
2 tsp cardamom
1/3 c sugar
3/4 c sour cream

Bring blueberries, water, cinnamon, cardamom, sugar to a boil.  Simmer for a few minutes until blueberries are plumped or exploded.  Using an immersion blender, blend until desired consistency.  Add sour cream and mix.  Refrigerate until cold.  Serve with creme fraiche

post script: if you don't have cardamom, please wait until you do to make this.

  7. Ann, it is sweet, but certainly not too sweet. It's also a bit tangy and you could add some plain yogurt if you want it even tangier.
